The Kitchn provides this week’s recipe ~ Grilled Chipotle Lime Cauliflower Steaks.

When I bought my first grill, many of my friends questioned, “What does a vegetarian do with a grill?”  I wish I had this recipe then.  A vegetarian can cook many things on the grill.  This may be my most favorite ever!

The “Yikes”

Initially, I was a bit yikes about how few steaks there are in a head of cauliflower.  What would I do with all the little pieces?

The “Yays”

Yummy, healthy, simple, quick, super cool … this recipe hits the top on all measures.  Flavors are really good.  The chipotle and lime, I could eat it by the spoonful.  The texture is also a big Yay for me.  I have grilled mushroom and eggplant steaks on the grill and get a little tired of the texture.  The cauliflower texture rocked.

Lessons Learned

The potential Yikes above quickly became a Yay.  Later during the week, I tossed the cauliflower pieces with all the yummy seasoning and roasted them in the oven.  Great entree for me and side dish for others.

Summing It Up

If you are even curious, make it!  We thought it was super easy and really good.  Meat eaters and vegetarians all enjoyed.  Although simple, it appears rather gourmet.  After my practice run, I will definitely make it for friends.  I served it with the Italian Blue Salad with Homemade Apricot Dressing.  Both are easy to make and impressive to serve.  Enjoy!
